Vegetarian cooking by conviction

DECATUR - Bill Challans has finally gotten his wish.
After just completing a cooking school offered by the Seventh-Day
Adventist Church over the last couple of months, he now knows how to
cook vegetarian style - actually vegan.
"Bill has wanted (a cooking school) for many years," said Bethany
Bolduc, who led members of the church and of the community through
cooking classes.
Challans is head elder at the church, and Bolduc chairs its health
ministries committee.
With roughly half of the 80 or so members of the congregation
vegetarian, they decided to offer the school. Not only did Bolduc
prepare and demonstrate recipes that were then sampled, but the school
also was planned to include discussions from physicians about healthy
living and healthy eating choices.

"I've been a vegetarian all my life," though, she added, "I don't try
to convert people.
"I've never eaten meat in my life.
"People don't realize what they're eating," Bolduc said, noting such
things as dough conditioners in purchased baked goods and antibiotics
and growth hormones in meat and poultry.
But Bolduc has gone a step further.
"I try my hardest to be vegan," said Bolduc about using no dairy
products or eggs in cooking or eating.
"For me and for my family, the biggest reason is for health," she
added, noting her husband David's allergy to dairy products.
